Chocolate & Orange Energy Balls

Chocolate & Orange Energy Balls
Prep time: 10 minutes

Quantity:  Makes approximately 20

Ingredients:

  • 200g almonds (note: for a nut free version check out my chocolate truffle recipe)
  • 100g cashews
  • 60g sunflower seeds
  • 10 fresh medjool dates
  • 1/2 cup desiccated coconut
  • zest 1 orange (when in season)
  • 2 Tbsp cacao powder
  • 1 large tsp cinnamon powder
  • 1/2 tsp vanilla extract or powder
  • 3 tbsp coconut oil
  • 2 drops consumable wild orange essential oil (optional)
  • extra desiccated or shredded coconut for rolling

Directions:

  1. Process nuts and seeds in a blender until finely chopped and a fine crumb texture.
  2. Add all other ingredients (except desiccated coconut for rolling) and blend until well combined and mixed in.
  3. The mix is ready when it holds together firmly when formed into a ball.  If it’s too dry, add a bit more coconut oil.  If too moist add more desiccated coconut.
  4. Pick up a small amount, about the size of a walnut or macadamia nut, roll into a ball shape, then roll in the extra coconut until all the mix is used.
  5. Store in the fridge or freezer (if they last that long)!

Notes: 

  • Add in or replace the ingredients with any other nuts, seeds or dried fruit you enjoy into the mix, play around with quantities until the right consistency of mix is formed.
