Garam Marsala Chocolate Fudge

I’ve made a lot of different chocolate recipes and this is definitely my (& my daughters) most favourite now!   A friend made a version of it and I was taken.  It was SO deliciously decadent, especially as she added a layer of chocolate on the top. Y U M.

My version includes extra goodness with different healthy fats (brain food), prunes for fibre and microbiome (bug), they’re also a great sweetener in the right recipe.  Plus lots of antioxidant rich ingredients for cellular goodness.  Enjoy.  Guilt free.

Garam Marsala Chocolate Fudge
Preparation: 10 minutes

Ingredients:

  • 1  cup pitted prunes (or use dates if you prefer)
  • 4 medjool dates (or leave out if using prunes)
  • 1/4  cup cacao butter gently melted
  • 3/4 cup coconut oil
  • 1/2 cup cacao powder
  • Handful of roughly chopped nuts (e.g. almonds, macadamias, brazil nuts and / or cashews)
  • Handful of dried berries e.g I used cherries & cranberries roughly  chopped
  • 1 tsp Garam Marsala
  • 1 tsp cinnamon
  • 1 Tbsp raw honey (optional)
  • Pinch of sea salt

Directions:

  1. Melt the cacao butter gently.
  2. Add the cacao butter and other  ingredients into a high speed blender  – except the nuts and berries.
  3. Blend on high until well mixed.  Add in remaining ingredients and gently fold in on a low, gentle speed or by hand to not crush nuts any more.  (A thick, chunky mix will be created).
  4. Taste.  If it needs additional sweetness add in  raw honey.  If the mixture is too thick add more coconut oil.
  5. Line a pan with baking paper and pour mix into the pan / dish to form a slice.
  6. Place in fridge for about 30 mins to set.  Enjoy.

Notes:

  • For an even more decadent fudge / slice, once set cover with a layer of home made chocolate or a good quality dark chocolate.
  • If you don’t enjoy some of the spices used, just leave them out or use smaller quantities.
