Berry Delicious (Chia) Jam - Uncooked.

When I cook I have a couple of priorities;   to use good wholesome, fresh, seasonal quality, delicious ingredients and, most of the time, it needs to be simple and easy to prepare, i.e. a blender recipe!   It ‘s surprising how easy it can be to bring some traditional recipes into a contemporary home.  Take this delicious Mulberry Jam for example.   A gorgeous client recently shared her home made strawberry jam, I was really touched  at receiving such a thoughtful gift, so when I found us with an excess of mulberries, we tried it out for ourselves.

Berry Delicious (Chia) Jam - Uncooked.
Ingredients:

  • 2 cups of seasonal berries (organic strawberries are great)
  • 3 Tbsp chia seeds
  • 1 Tablespoon water (if necessary)
  • 1/2 teaspoon vanilla powder
  • 2 Tbsp honey or preferred sweetener, to taste.

Directions:

  1. Add the berries and chia seeds to your blender, or if they are very ripe you may be able to blend them up with a fork.
  2. Mix in the vanilla, water (if using) and honey. Use the honey or sweetener to suit your own taste. I found just 3 teaspoons of honey gave it just a light sweetness and it let the fresh strawberry taste shine through, but it definitely isn’t as sweet as your typical jam.
  3. Cover the jam and put it in the fridge for at least 60 minutes to thicken.

That’s it!  Keep the jam in the fridge in a glass jar and enjoy!

Note

  • Frozen berries can be used, just let them thaw first
  • This is also a wonderful gift for Christmas time
