Best Ever Chocolate Brownie Cake

This really is one of THE best cakes I’ve had the joy of making!

I hosted a morning tea for Mums who were in Perth and who’d joined me in my e-course, ‘Our Happy Chidren’ this year.  I wanted to create a beautiful, special cake for these amazing Mums, as the morning tea was to be a celebration of our time together in the course and all that they’d achieved!   So this cake needed to be rich, decadent, moist and delicious and hopefully give them the joy of feeling  special and appreciated.

This was the first time I’d tried this recipe, so I made it ahead of time to make sure it tasted okay!   I didn’t need to worry.  With a very surprising main ingredient, this cake is a treat.  It definitely met, actually… exceeded my expectations.   When you’re next looking for something a bit special and you don’t have much time or … maybe you just have that urge for something decadently delicious – try this.  You won’t be disappointed.  (My kids also loved this, although they’re used to dark chocolate.  If your kids aren’t just yet, introduce it gradually, they’ll get there).

Best Ever Chocolate Brownie Cake
Ingredients:

  • 1 medium sweet potato, grated.  You will need approx. two cups of grated raw sweet potato.
  • 2 eggs
  • 1 tsp vanilla bean paste or powder
  • 1/2 cup dates finely chopped
  • 1/2 cup maple syrup or use brown rice malt syrup
  • 1/2 cup melted butter or coconut oil
  • 1 tsp gluten-free baking powder
  • 1/4 tsp bicarb soda
  • 3/4 cup of raw cacao powder
  • 2 Tbsp coconut flour

Directions:

Preheat the oven to 180C (360F)

Grease and line a 22cm square cake tin

  1. Place all the ingredients into a blender bowl and blend on medium – high until all ingredients are blended through.  (note: the batter will be a thick consistency i.e. it won’t pour gently out of your bowl.  It will need some encouragement with a spatula)!
  2. Pour into your prepared cake tin and bake for 25-30 minutes.  The cake needs to feel moist in the center, but not wet.  Check if it’s cooked with a knife, when you stick the knife into the cake & pull it out, it will come out clean.
  3. Top with a chocolate ganache icing for extra richness or fresh organic cream for something a bit lighter.  To make the ganache I used my home made chocolate recipe here.   And for extra decadence serve with chocolate shavings, fresh organic strawberries or raspberries (or drizzle with melted chocolate)!

Notes

The cake can be a little crumbly so if you’re moving it to a plate you will need to be a little careful.
