Cherry Ripe Popsicles

Cherries are packed with nutrients and rich in antioxidants which help protect our cells and I love their deep, rich colour.  Add in some beetroot, coconut, a couple of other ingredients and a dash of sweeter, and it’s delicious!  Pop in the freezer,  dip in some chocolate once it’s frozen and the kids (big and little) love them.  And they’re healthy!  Enjoy.

Cherry Ripe Popsicles
Preparation:  5  minutes

Freeze time:  approx. 3 or 4 hours

Quantity:  4 icy poles

Ingredients:

  • 2 cups frozen cherries
  • 1 small cooked beetroot (or I used raw beetroot, and less of it approx. 1/4 cup).
  • 1/3 cup preferred natural yoghurt
  • 1/4 cup coconut milk
  • 1 tsp vanilla powder or vanilla extract
  • 1 Tbsp maple syrup or preferred sweetener

Directions:

  1. Place all ingredients into a blender.
  2. Blend on high for about 40 seconds or until all ingredients are well combined and a smooth consistency.
  3. Taste.  Add more sweetener if need be or coconut milk for more of a cherry ripe flavour.
  4. Pour into your popsicle moulds.
  5. Leave in the freezer for 4 or 5 hours until completely set.   Enjoy as is or top with melted and cooled home made chocolate and cover with desiccated coconut if preferred.  Home made chocolate recipe here (cut the recipe in half and pour any leftover chocolate into moulds for home made chocolate)!
  6. Have as an after school treat to beat the heat or as a festive, christmas treat!
