Versatile Chocolate Banana Dessert

This is an easy snack to make ahead of time.  It uses Kudzu to thicken the pudding.  If you’re not familiar with Kudzu, it’s very health supportive – highly alkalising, is wonderful for the digestive system, nutrient rich and very calming.  It can be found in whole food or health stores.

It’s generally quite lumpy.  To easily measure the kudzu, place it in a small bowl and crush gently with a pestle or the end of a rolling pin, to a fine powder.  This pudding becomes firmer  as it cools and will last in the fridge for 3 or 4 days.  In the cooler months I’ve sent it off with the kids in their lunch boxes for morning tea and also served it as a warming afternoon tea.  Enjoy!

Versatile Chocolate Banana Dessert
Ingredients:

  • 3 1/2  Tbsp kudzu
  • 2 tablespoons cacao
  • 2 Tbsp maple syrup or brown rice malt syrup
  • 1 1/4 cups your preferred milk (almond, rice or coconut)
  • 1 cup coconut milk
  • 1 Tbsp natural vanilla extract
  • 2 bananas

Directions:

  1. Add the Kudzu, cacao & maple syrup to a medium saucepan, with 1/4 cup milk and stir into a smooth slurry.
  2. Add the remaining 1 cup of milk,the coconut milk, vanilla and whisk until well combined.
  3. Place over a medium heat and just bring to the boil, stirring constantly until thick and smooth.
  4. Once you see the bubbles from the boil, give it a couple of more stirs and remove from heat.
  5. Spoon the chocolate pudding and spoon into bowls or pots (or let cool and serve later).
  6. Peel and cut the banana (if using) into small pieces and divide between small pots or bowls.

Note

  • Make a big batch and it will keep in the fridge for 3 or 4 days.
