Rustic Coconut, Macadamia and Mint Bark!

At 2:45pm I finally turned my mind to organising something for the kids afternoon tea!   I went to my  2 pantry staples always there for me when I need them,  cacao a.k.a. chocolate and coconut oil.  These two always take pride of place in the pantry, along side a couple of other handy staples for flavour and texture.   So was born this fabulous chocolate bark!  It honestly takes a few minutes to prepare and seconds to devour!  I love the rustic feel and nature of having to break it up ‘peasant’ style to eat it, (if that’s what you like).   It’s full of nourishing and sustaining healthy fats, along with healing, cell-loving goodies!  Our family devours it.  I hope yours does to, GF (Guilt Free).   This recipe can be nut free, dairy free, gluten free and will still taste absolutely delicious!  Just one more reason to love it. 

Serves:  4 – 6 

Preparation:  5 minutes

Measurements:  approximate (make it your own)

Rustic Coconut, Macadamia and Mint Bark!
Ingredients:

  • 2 tbsp cacao powder
  • 2 tbsp coconut oil
  • 4 tbsp cacao butter or use organic dairy butter (or if you don’t have cacao butter or are intolerant to dairy butter use 6 tbsp of coconut oil only)
  • 1/4 cup macadamia nuts (enough to scatter across the plate or baking dish you’re using)
  • 1 tbsp desiccated coconut
  • 2-3 drops peppermint essential oil (optional)
  • 1 – 2 heaped tbsps of your sweetener of choice e.g. honey, brown rice malt, coconut or maple syrup, stevia.

Directions:

  1. Line a dinner plate or baking tray with baking paper (preferably a plate with a ‘lip’ so the chocolate mix doesn’t ‘run off’ the plate).  If you’re using a small baking tray, double the above quantities
  2. Roughly chop the macadamias and scatter over the plate
  3. Mix together the cacao,  coconut oil & cacao butter (if using).  If the oil is hard place into a pot and melt over a low heat and mix together.
  4. Add in the remaining ingredients and stir.
  5. When it’s all mixed pour  evenly over the macadamias on the plate.
  6. Carefully pop into the freezer until it’s ready to serve.   Takes about 30 mins – 45 mins to set.
  7. To serve –  break into shards or cut into wedges.   If there are left overs, transfer  them to a glass container to store for up to a week or keep in the freezer.

Notes

  • Add whatever favourite ingredients you have in the pantry and that you enjoy with chocolate e.g. goji berries, chilli, peppermint or cinnamon essential oil, coconut chips, cacao nibs, dried fruit, cashews, almonds etc.  There are so many options.
  • Here’s how this recipe works;   Good fats are used to set the chocolate, (e.g. a mix of coconut oil, cacao butter and / or butter could be used), then the chocolate powder added to make chocolate! and then add in whatever you most enjoy in your chocolate for flavour & texture.  Within minutes you have your own family… Bark!  Enjoy.
