Coconut Macaroons

This recipe is a classic, with a great healthy twist. Try adding in some cacao nibs for a decadent chocolate flavour and enjoy!

Preparation:  10 minutes

Quantity:  approx. 10

Coconut Macaroons

  • 2 large egg whites
  • ¼ cup honey or coconut nectar
  • ¼ teaspoon celtic sea salt or himalayan salt
  • 2 cups desiccated coconut
  • 1/2 cup shredded coconut
  • 1Tbsp cacao nibs (optional)


  1. In a  bowl whisk the  egg whites and honey (or preferred sweetener)
  2. Whisk in salt, then stir in coconut flakes and cacao nibs if using
  3. Take a small spoonful of the mix and using your hand, firmly pack the mix into the ball of a walnut sized shape
  4. Place the ball onto a baking tray lined with baking paper 
  5. Bake at 180° for 10-12 minutes, until macaroons are golden brown
  6. Allow to cool and serve
