Cress and herb salad

Cress and herb salad
Prep time: 10 minutes

Yield: 2 servings

Ingredients:

  • Handful of mixed sprouts (broccoli, mung bean, pea, or what you have readily available)
  • 100g bean sprouts (if available)
  • Handful of rocket
  • Handful of watercress
  • 1/2 Handful of fresh mint leaves
  • Handful of fresh coriander
  • 1/2 carrot, cut into thin strips (julienne)
  • 1 whole lemon (peeled and segmented)
  • 1 Red Chilli (de seeded and finely chopped)

For the dressing:

  • 1/2 tsp turmeric powder
  • 1/4 tsp grated ginger
  • Good glug of Extra Virgin olive oil
  • Juice of ½ lemon
  • 1 tsp honey (or leave out if you prefer)
  • Salt & pepper, to taste

Directions:

  • Simply mix up all the salad ingredients in a bowl.
  • Mix up all the dressing ingredients in a cup, then pour over the salad ingredients.
  • Mix up by hand and then serve

Variations:

  • When limes are in season, use in place of lemon
  • Add whatever crunchy, green and fresh veggies you love and are on hand and make it your own.
