Decadent Chocolate Mint Cookies

Being the chocolate fan I am, I’ve been keen to find a good chocolate biscuit recipe for awhile and this one certainly ticks all the boxes.  Full of nourishing goodness with walnuts (brain food), whole dates for natural sweetness and coconut for more good fats & deliciousness.  They taste incredible!  The kids loved helping with the chocolate coating of course… forks were not to be seen, only little, enthusiastic fingers.  They are a real ‘treat’ and treat them as such.  My kids (big & little) adore these and cannot get enough.  A decadent twist to an ol’ favourite.   Enjoy!

Preparation:  20 minutes

Freezer:  15 minutes

Quantity:  approx 10

Decadent Chocolate Mint Cookies


  • 80g walnuts
  • 80g medjool dates
  • 80g shredded coconut
  • 1 tbsp maple syrup (optional)
  • 2 drops of consumable peppermint essential oil or 1/2 cap of peppermint extract
  • Dark chocolate to coat the biscuits (use a good quality dark, organic chocolate or simply make your own with my recipe here).


  1. Melt the chocolate in a small but deep bowl, and if need be, place in the fridge to firm the chocolate a little before coating the biscuits.  Or, let sit on the bench and stir occasionally until needed.
  2. Put the walnuts into your high speed blender and blitz on the highest setting until a fine meal is made.
  3. Add the dates and blitz on a high speed until the dates are all blended in finely
  4. Add the remaining ingredients and blitz until well combined.
  5. Roll in to balls and flatten into biscuit shapes.  Place on a lined baking tray and put in the freezer for 15 minutes.
  6. Using a fork dip the biscuits into the chocolate and put back on the tray.
  7. Put back into the fridge or freezer until ready to serve.


You just might want to double the recipe – they go so quickly!
