Delicious grain free, dairy free pancakes!

These pancakes are the best!  Grain, gluten, dairy and sugar free, yet full of deliciousness for the mind, body and soul.

They’re bursting with nutrients that satisfy, taste delicious and are quick to prepare (as far as pancakes go).  I feel so good sending us all off for the day knowing we’re well fuelled and set for a great day.

Fyi we usually save pancakes for weekends, but these are a delicious, healthy exception…

Delicious grain free, dairy free pancakes!
Preparation:  5 – 10 minutes

Cooking time:  approx. 15 minutes

Serves:  4

Ingredients:

  • 2 medium sized bananas
  • 5 eggs
  • approx 1/3 cup almond or sunflower meal (optional – makes them denser)
  • 1 tsp baking powder
  • 1 tbsp psyllium husk ⠀⠀⠀⠀⠀⠀⠀⠀⠀

OR also add in these options;

  • ½ tsp cinnamon powder
  • splash of vanilla extract
  • honey! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

Directions:

  1. Blend all the ingredients together until thoroughly combined.
  2. Allow to ‘sit’ for about 5 minutes or until the mix thickens a little.
  3. Warm a pan and melt approx. 1 tbsp butter or coconut oil to cover the base of the pan.⠀⠀⠀⠀⠀⠀⠀⠀⠀
  4. Start pouring the batter into the heated pan and to the size pancake you prefer.
  5. Keep cooked pancakes warm in a preheated oven on a low temperature. ⠀⠀⠀⠀⠀⠀⠀
  6. Serve with your favourite spread, yoghurt and / or fruit.  A wweetener isn’t required with these pre sweetened pancakes!
