Easy Home Made Dukkah

A traditional Egyptian food, Dukkah adds flavour and deliciousness to any meal and is jam packed full of cell loving nutrients, making it great for digestion, adding more minerals and nutrients into our food and helping with the absorption of food.  It’s quickly become a pantry staple and I love that it’s super easy to make.  Enjoy it with a bit of extra spiciness with some added chilli or just as is.  It  also makes a wonderful gift.

7 simple ways to add it into your menu repertoire!

  1. Add it to your favourite dip.
  2. Dip your favourite gluten free bread into olive oil and dip into your dukkah.
  3. Serve sprinkled on top of your eggs in the morning.
  4. Add it into rice or quinoa dishes for a middle eastern take.
  5. Sprinkle over root vegetables with ghee, coconut or olive oil and roast until well cooked.
  6. Add it into your salad dressing for a middle eastern and delicious flavour enhancer.
  7. Wherever you like!
Easy Home Made Dukkah
Preparation: 20 minutes

Quantity:  approx. 4 cups

Ingredients:

  • 1 cup macadamia nuts (roasted or plain or use almonds, hazelnuts, cashews or sunflower seeds)
  • 100g sesame seeds
  • 2 tsp cumin seeds
  • 40g coriander seeds
  • 1/2 tsp sea salt
  • 2 tsp dulse flakes
  • 3 tsp dried oregano leaves
  • pepper to taste

 

Directions:

  1. Toast the cumin and coriander seeds until lightly brown and aroma released, about 1 -2 minutes. Put aside to cool.
  2. Gently brown the macadamia nuts in the same way (if not already roasted), put aside to cool.
  3. Then gently brown the sesame seeds in a similar way, put aside to cool.
  4. Once cooled.  Place the cumin and coriander into a high speed blender.  Blend on high for about 40 seconds or until roughly milled.
  5. Add the sesame seeds and macadamia nuts.  Blend on high until texture is roughly chopped and looks the consistency of dukkah, so can be easily sprinkled or used in food.
  6. Add the remaining ingredients and stir in gently until thoroughly mixed.
  7. Taste.  Add in extra salt, oregano or other herbs or spices if you need.  For a spicier taste add in chilli flakes (see note below).
  8. Serve with your favourite meal, as a dip or a home made gift.
  9. Store in an airtight container in the pantry.

Note:

  1. for a spicier version add 1/2 tsp chilli flakes with the macadamia nuts and sesame seeds.
  2. or to boost the nutritional value add in 1 tbsp of hemp seeds per cup of mixture!
