Gluten Free Apple Crumble

Apple Crumble has always been a Winter favourite and something I’ve missed since taking gluten out of our diet, so I’m delighted to share this deliciously simple and nourishing crumble recipe.    It’s been ‘road tested’ many times by our family and has quickly become a regular addition to our Winter Menu Repertoire!   It’s especially good through the Winter months when we can make great use of ALL those delicious apples that are in abundance. (If you have an allergy to nuts, see the notes section).

Preparation:  15 – 20 minutes

Quantity:  Serves 8

Gluten Free Apple Crumble
Ingredients:

  • 2 cups almond flour (or make your own, take approx. 1 1/2 cups activated almonds & mill in a high speed blender until texture is fine)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup coconut oil or organic butter
  • ¼ cup brown rice malt syrup or maple syrup
  • 1 Tbsp vanilla extract
  • 7 medium seasonal apples, peeled, sliced then chopped roughly into 2cm slices

Directions:

  1. Add all ingredients into a medium sized bowl or blender and mix until a dough like consistency forms
  2. Place apples into a pot with a 1 Tbsp of water or into a steamer and gently cook until tender.  Should take approximately 10 -15 minutes.
  3. Once just cooked place into a pie or baking dish that’s about 30cm wide
  4. Crumble topping over the apples
  5. Cover and bake at 170 degrees for 20 minutes or until the crumb is lightly browned.
  6. Serve warm as is or with organic cream or home made ice-cream

Enjoy!

Notes

  • Try adding about 1/4 cup of roughly chopped almonds, macadamias or almonds through the batter for extra crunch or
  • Lightly toasted coconut flakes mixed through would also be delicious,whatever your taste buds prefer!
