Lemon and Ginger Pickle

I came across this Ginger Pickle from Christa Orecchio at the Whole Journey.   Ginger is traditionally used in many countries e.g. in India, they use a homemade pickled ginger and in Japan, pickled ginger is regularly served with raw fish and a great addition to a meal.

It’s super easy recipe to prepare.

Lemon and Ginger Pickle
Preparation: 5 minutes

Ingredients:

One full ginger root peeled (the size would cover the palm of your hand 1.5x), peeled and shredded with a carrot shaver or cheese grater
Juice of one lemon
1 teaspoon Himalayan pink salt or celtic sea salt.

Directions:

Mix together and place in a jar.
Allow to “pickle” overnight and take ½-1 teaspoon before bigger meals daily for 2-4 weeks.
