Power (Pirate) Muesli Bar

Our family have been loving these delicious and nutritious Power (Pirate) muesli bars.  They’re from Lee Holmes, Supercharged Kids ebook, but you definitely don’t have to be a kid to enjoy them!   They’re gluten and dairy free, full of good fats, protein and so much more sustaining than any muesli bar you’ll find with a trip to the shop.  Make a big batch and they’ll last a few days in the fridge and even longer in the freezer.  All you need are a few key ingredients on hand and within minutes the hard works done!

Preparation: 10 minutes

Baking:  15 minutes (then about 1 hour in the fridge for the bar to set)
Serves:  makes about 8 bars

Power (Pirate) Muesli Bar
Ingredients:

• 3 tbsp coconut oil or organic butter
• 3 tbsp rice malt syrup or your choice of sweetener
• 2 tsp of vanilla extract or 1 tsp vanilla powder
• Pinch of Celtic sea salt
• 11/2 cups mixed seeds & nuts, almonds, cashews, sesame, sunflower, pepitas, chia etc finely chopped
• ¼ cup cranberries, goji berries, dried mulberries or dried fruit of choice
• ¼ cup cacao nibs (note if you don’t have the nibs or dried fruit, add another ½ cup of seeds & nuts).
• 1 tbsp cacao powder
• 3/4 cup unsweetened desiccated coconut

Directions:

1. Preheat oven to 150 degrees Celsius.
2. Melt coconut oil or butter in a saucepan over medium heat.
3. Add in rice malt syrup or sweetener, vanilla extract, sea salt and stir.
4. Turn off heat and stir in seeds and coconut.  (note seeds & nuts can be roughly chopped in your high speed blender)
5. Spoon mixture into a square baking tin and press down firmly.
6. Place in oven and cook for 10 minutes.
7. Cool in refrigerator and then cut into bars
