A quick and easy snack full of nourishing ingredients guaranteed to happily satiate hungry tummies.
Preparation: 10 minutes
Baking: 25 minutes (approximately)
• 1/2 cup raw honey
• 180g butter, melted
• 1 cup almond or macadamia nut meal (or for nut free see the note below)
• 1/2 cup coconut flour
• 4 organic eggs
• 2 Tbs lemon zest
• ½ cup fresh or frozen organic raspberries
Directions:
1. Preheat your oven to 180 degrees celcius and line a friand pan with 8 friand paper cases or used muffin cases if need be.
2. Combine all the ingredients except the raspberries into a bowl and mix well or if you have a blender mix it thoroughly in the blender
3. When well combined, fold the raspberries in gently.
4. Spoon mixture into friand or muffin cases and insert one raspberry into each.
5. Bake for approximately 25 minutes or until a skewer or knife blade inserted comes out clean.
6. Cool in the pan for 5 minutes.
7. Store in the fridge in an airtight container or freeze for another time.
Note:
For nut free try replacing the almond meal with sunflower meal or pepita meal.
