Raw Peanut Butter Chocolate Fudge

Full of satiating, immune boosting and energising healthy fats, this sweet treat is a crowd pleaser.  Quick and easy to prepare, even my harshest critics a.k.a. our children – love it.  It’s perfect for an afternoon tea or when you need that something sweet.  Enjoy.

Raw Peanut Butter & Chocolate Fudge
Preparation:  15 minutes

Fridge time:  1 hour

Quantity:   Approx. 15 bite size fudges

Ingredients:

  • 1/2 cup coconut oil
  • 1/4 cup ghee (or another 1/4 cup coconut oil if preferred)
  • 1/2 cup good quality peanut or favourite nut butter
  • ¼ tsp vanilla essence
  • 2 – 3 Tbsp raw, unfiltered honey

Chocolate layer

  • 1/4 cup cacao butter
  • 1.5 Tbsp cacao powder

Directions:

  1. Add all the ingredients except the chocolate layer to a small saucepan and gently heat on a low temperature to combine and melt ingredients.
  2. When melted and stir very well to mix thoroughly.  Taste for desired sweetness and add more honey if need be.
  3. Quickly pour approx. half the mix into a small dish lined with baking paper e.g. the one I use is approx. 12cm x 18cm.  (It really doesn’t matter how approximate it is!)
  4. Place in the fridge for about 30 minutes to firm.
  5. For the chocolate layer add the cacao powder and cacao butter to the remaining peanut butter mix in the saucepan and gently heat to melt and mix very well.
  6. When thoroughly mixed, pop in the fridge to set again.
  7. When it’s set, cut into bite sized squares and place in the fridge or freezer in a container, ready to enjoy.

Notes:

  • For even quicker prep. and if you like leave the chocolate layer ingredients out, pouring the entire peanut butter mix into the dish at step 3.  Then into the fridge.
  • For a sesame flavoured fudge replace the peanut butter with 1/3 cup of tahini.
