1 (270ml) can of coconut milk (plastic unlined e.g. BPA free)
2 Tbsp honey preferably raw and unfiltered
2 tsp vanilla
2 cups of frozen raspberries, or other berries (Do not defrost, the combination of the cold berries and the gelatin creates a whipped-like texture.)
1 Tbsp lemon juice
1 Tbsp gelatine, dissolved into 1/4 cup boiling water (add this last, right before blending) or use 4 x leaf gelatin (preferably pasture fed).
Directions:
Add all the ingredients into a blender (except the gelatin mix)
Puree the mix until combined, then drizzle in your gelatine mix, make sure the mixture is liquid, if it isn’t you will have to melt it again. Blend approximately 2 minutes or until whipped and airy. It should be a creamy consistency.
Serve with fresh berries. We also added fresh cream!
