White Christmas

A super simple and satiating recipe based on my paleo icing.  Full of healthy fats it’s guaranteed to satiate anyone and everyones hunger. 

Preparation:  5 minutes

Serves:  approx. 15 bite sized slices

White Christmas

  • 1 cup firm coconut oil (unmelted)
  • 1/2 cup raw, unfiltered honey
  • 1/3 cup coconut milk
  • 1/4 cup coconut flour
  • 1/4 cup lemon juice (taste the mix and add more if preferred)
  • 1tsp lemon zest, finely chopped
  • 1/4 cup chopped nuts e.g. macadamia, pistachio or almond
  • 1 Tbsp naturally sweetened cherries, chopped (or use goji berries)


  • Apart from the nuts and berries add all the other ingredients to a blender, thermomix or food processor and mix until blended and smooth.
  • If the mix is too moist add extra coconut flour or if it’s too dry or stiff, add a bit of extra coconut milk.
  • Mix in the remaining ingredients.
  • Spoon into a baking tray and smooth to desired thickness.
  • Place in the fridge to ‘set’.  When firm cut into bite sized pieces and enjoy!


  • Keep in the fridge.
  • Top the slice with lemon or lime zest and/or shredded coconut for decoration if you like.
  • Leave out the lemon and add 2 – 3 drops food grade peppermint essential oil.
  • Leave out the lemon and Add 1 Tbsp of cacao for a chocolate flavour, plus 1 tsp of vanilla or cinnamon.  Or whatever you enjoy.
