Wholesome Breakfast Loaf

Full of appetising and satiating nutrients, guaranteed to keep big and little kids well fuelled, this breakfast (veggie) loaf can be enjoyed at any time of day or when the need for a snack arises.  Add in your or your families favourite ingredients.   Our kids have been loving it with a bit of parmesan cheese added in.   Enjoy. 

Preparation:  10 minutes

Baking:   1 hour and 30 minutes (approximately)


Wholesome Breakfast Loaf
1 Loaf


• 4 eggs
• 100g butter or coconut oil
• 200g ground almonds
• 100g ground hazelnuts
• 2 tbsp psyllium husk
• 400g seed mix (e.g. sesame, sunflower or pumpkin)
• 100g shredded zucchini
• 200g shredded carrot
• Pinch of sea salt


1. Grate the vegetables (or pop them into a blender and chop them up reasonably finely)
2. Add the rest of the ingredients into the veggie mix and combine well
3. Put the mix into a greased loaf tin
4. Bake on 160 C for about 1 hour and 30 minutes
5. Cool until deliciously warm and enjoy with butter or your favourite savoury topping


• Add any other favourite flavouring e.g. ½ cup of grated parmesan or goats fetta, sundried tomatoes, sliced olives, sauteed onion and/or bacon, herbs, chilli flakes etc. So good.
