Sweet Potato & Lentil Patties
Preparation:  15 minutes

Cooking:  1 hour approximately

Quantity:  14 patties


  • 600g peeled sweet potato, cut into 2cm cubes (or use a mix with pumpkin and / or potato)
  • 1 onion, peeled and cut into quarters
  • 6 cloves garlic, peeled
  • 400g can brown lentils, rinsed, drained
  • ¼ cup capers
  • 3 Tbsp mixed herbs e.g. basil and parsley
  • 1/3 cup parmesan cheese (optional)
  • 1 Tbsp psyllium husk
  • 1 egg (or 1 Tbsp flaxseed with 1 Tbsp water)
  • 1 Tbsp coconut oil or organic ghee
  • 85g (1/3 cup) home made mayonnaise, to serve


  1. Preheat oven to 180 degrees celsius or 350 degrees fahrenheit.
  2. Cover sweet potato (& other vegetables if using), onion and garlic with melted coconut oil.
  3. Place on a baking tray into the oven.
  4. Bake for 25 – 30 minutes or until tender.
  5. Meanwhile place all the other ingredients (except mayonnaise) into a bowl.
  6. When the vegetables are cooked through, place them into a blender and blend on medium for 5 – 10 seconds or until the ingredients are well mixed yet vegetables are still a bit ‘chunky’.
  7. Add the blended vegetable mix to the remaining ingredients in the bowl.
  8. Mix together thoroughly.
  9. When well mixed, take a spoonful of mix and form into patties and place onto a lined baking tray.
  10. Place into the oven for 20 minutes or until lightly browned.
  11. Enjoy for lunch, dinner or a snack and serve with a fresh, leafy green salad and home made mayonnaise, guacamole or steamed vegetables.  Delicious!
